愛不愛餐廳裡的泰式生春捲?酸酸辣辣香香的,熱量低又美味,玫瑰今天試著做了,還真是可口,可惜相機不在手邊,趁著記憶猶新,分享。
備料:
越南春捲皮:十八張﹙長得像塑膠桌墊,有的牌子寫樹薯米皮,圓形、半透明。全聯社、家樂福有賣﹚
越南米線:一包﹙熱水燙熟、瀝水﹚

蛋皮絲:一碗﹙可加可不加。約四顆蛋,不加油,薄煎﹚

新鮮白蝦:二十七隻﹙一斤,去腸泥,滾水、加酒、加蓋悶煮熟,泡冰水,剝殼,對剖備用﹚

檸檬:一顆,榨汁﹙順便刨一點兒檸檬皮屑備用﹚
泰國魚露:小瓶裝的四分之一瓶﹙很臭、超臭,不要沾到手﹚
香菜﹙芫荽﹚:多一點,洗淨、切碎
新鮮紅蔥頭:八顆,去頭尾,剁碎
九層塔:可不加入醬汁內。適量,洗淨、切碎﹙請留3×18葉不要剁﹚
辣椒:一根,洗淨、去籽、切碎﹙可依喜好增加﹚
白砂糖:兩大匙
做法:
泰式酸辣汁:
缽中依序置入檸檬汁→辣椒→魚露→白砂糖→紅蔥頭→香菜→九層塔→檸檬皮→拌勻

包生春捲:
A、取一淺盆,倒入冷開水,放一張越南春捲皮約六十秒,取出米皮,放上料理板﹙皮要一張一張分別泡軟,不可一次放好幾張﹚

B、在米皮中央由左而右排放三片九層塔,然後在葉上分別擺上半隻蝦子,然後放一點香菜末,擺放米線,擱一點洋蔥絲、一點蛋皮,灑一點碎花生
